Black Garlic Recipe of the Week: A delicious vegan side dish!

To quote my Father, “Eat your veggies!”


If you have read some of my other blog posts then you know I am obsessed with a few specific foods; pistachios, garlic, broccoli, onions and… Brussels sprouts (and the occasional Oreo sandwich cookie that I might devour in cases of extreme stress)! Today, we will be focusing on the beautiful and delicious Brussels sprout (yes, that IS the proper spelling) with an easy, vegan recipe that practically anyone will find satisfying!

But, first, let’s talk about what it means to eat a vegan diet.


Truth be told, the first time I took a true interest in a diet other than my own was while dating a vegetarian (nope, not vegan) mountain climber from Chicago a few years back. It didn’t end well because he was better at committing to his diet than he was at committing to me, but that is probably too much information! Let’s get back on track, shall we?

“Veganism is a lifestyle that excludes all animal products and attempts to limit the exploitation of animals as much as possible.”

Those who follow the vegan diet do more than skip meat at the dining room table. Vegans also avoid foods that can come from animals themselves, such as eggs, milk and honey. One shouldn’t associate veganism with restriction, however! For example, eggs can be substituted with scrambled tofu, cow’s milk can be exchanged for plant-based milk (think Almond and Oat Milk) maple syrup can be used instead of honey, and you can still eat as much of our black garlic as you want! According to Healthline, “vegans tend to consume a variety of whole grains, as well as a wide array of fruits and vegetables… legumes, nuts, seeds, and products made from these foods.”

In addition to eating specific foods for health reasons, vegans may cite ethical and environmental reasons why they follow this lifestyle. So, it should be noted that veganism goes beyond the grocery store shelves and into the fashion industry, environmental protections, animal rights, and much more.

Brussels sprouts and your health


I absolutely LOVE the taste of brussels sprouts, but taste isn’t the only reason to give them a try. Just one cup of raw brussels sprouts contains all of your recommended daily value of Vitamin C (immune system support and skin health) and all of your recommended daily value of Vitamin K (bone health). That one cup also holds Vitamin B-6, Folate and Potassium. So, grab some and get to cooking!

Charred Brussels Sprouts with Black Garlic

Ingredients:

  • 2 tablespoons coconut oil, melted

  • 8 fermented black garlic cloves

  • 2 tablespoons tomato paste

  • 1 teaspoon smoked paprika

  • 2 tablespoons balsamic vinegar

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 pound Brussels sprouts, trimmed and halved through stem


DIRECTIONS:

  • Preheat your oven to 425 degrees.

  • In a large bowl, whisk the melted coconut oil, black garlic cloves, tomato paste, paprika, vinegar, salt & pepper.

  • Add the Brussels sprouts and toss them to coat them evenly with the mixture. I would suggest trying our Diced Black Garlic cloves in this recipe, or dicing the 8 peeled cloves.

  • Spread Brussels sprouts in an even layer onto a baking sheet.

  • Roast the Brussels sprouts for 25 minutes until golden brown and tender. Roast for an additional four minutes if a charred flavor is more desired (I highly recommend the additional time)!

***Roasting Tip: Try roasting your veggies (including Brussels Sprouts) with our Black Garlic Powder for a flavorful treat!
