‘Tis the season for delicious treats and there is no better day to prepare something sweet and yummy than Bake Cookies Day! Today, December 18th, is Bake Cookies Day and the perfect day to get all of those holiday treats finished before your family and friends come to visit! Whether you like crunchy or chewy (or both), we hope you will have the time today to enjoy a baking tradition with the people you love, and to use Black Garlic in your recipes!

To celebrate the day we are sharing our latest cookie recipe with you, and we can pretty much guarantee it won’t be like anything you have ever baked! We mix our black garlic with delicious maple syrup and add dark chocolate to create something truly special that we hope you will try this season. This writer’s family gobbled up all of the cookies within 24 hours - they couldn’t even tell that NO WHITE SUGAR was used in this recipe!

Sweet ingredients like Maple Syrup go GREAT with Black Garlic so putting these two ingredients together to make a cookie was a no-brainer! According to Maple Syrup World at www.maplesyrupworld.com:
“By replacing sugar with maple syrup in your cooking, the sweetness is still very much present. Maple Syrup is around three times as sweet as regular sugar with fewer calories. Another interesting benefit to using maple syrup in cooking is that it has a low glycemic index, making it an ideal sweetener for those who suffer from diabetes.” Did you know we sell our Dunek’s Brand Maple Syrup on our Online Store? All of the syrup used in this recipe is Dunek’s Brand Maple Syrup. I personally chose Strong Grade because… well, you just gotta try it!

After we mixed Black Garlic & Maple Syrup together it was time to pick the CHOCOLATE. I actually made two different versions of this recipe: one recipe had only Dark Chocolate, and the other had Semi-Sweet in both mini chips and traditional-size chips. In the taste-tests, the Dark Chocolate won in this cookie, hands-down! I used 60% Cacao chocolate chips when creating this recipe and broke them up a bit. But the toughest part was yet to come.

Choosing the exact right amount of black garlic for this recipe is tricky and depends on the black garlic product you have at home. Cloves from inside the Black Garlic Whole Bulbs tend to stay intact and be larger. When using Peeled Black Garlic Cloves the cloves aren’t quite as big, so when choosing the amount of cloves for your recipe, consider your clove size. I chose 24 of the already-peeled Black Garlic cloves from Black Garlic North America (and diced them) but if I were to have had Whole Bulb Black Garlic on-hand I would have probably reduced that amount to about 16-18 cloves (diced!). Feel free to experiment or start with 16 cloves and add more to suit your taste. Your cookies aren’t going to taste “garlicky” because black garlic does NOT have the same flavor as traditional garlic (or the same color, or the same texture, or the same smell… you get it) so go for it!

So, without further ado, I present to you my Maple Black Garlic Chocolate Chip Cookies! Maple Black Garlic Chocolate Chip Cookies

INGREDIENTS

  • 1 C Salted Butter 

  • ¾ C Dunek’s Brand Maple Syrup
    STRONG GRADE was used in this recipe 

  • ¼ C Brown Sugar 

  • 2 Eggs 

  • 1 tsp Vanilla 

  • 1 tsp Maple Flavoring 

  • 24* Cloves Black Garlic North America Peeled Black Garlic - Diced 
    *16 cloves from Whole Bulb Black Garlic as cloves directly from the bulb are larger

  • 2 ¾ C All Purpose Flour 

  • 1 ½ tsp Baking Powder 

  • 1 tsp Baking Soda 

  • 1 ½ C Dark Chocolate Chips
    *60% Dark Chocolate Chips were used in this recipe


DIRECTIONS:

Allow butter to come to room temperature. Beat butter on med-high speed for 3 min, or until fluffy. Add brown sugar & maple syrup and mix again. Add eggs, vanilla, maple flavoring & diced black garlic - mix for another 30-60 sec.

Sift flour, baking powder & baking soda into a separate bowl and mix together. Add flour mixture one cup at a time to the butter mixture and beat until all contents are mixed together. Mix in chocolate chips gently. Refrigerate 30 min.

Form cookie dough balls by hand, about 1 1/2” diameter, or drop by rounded teaspoonfuls about 3” apart on greased cookie sheet.

Bake at 325°f for at least 15 mins - depending on your taste in cookies you can add a few additional minutes. A chewy cookie is achieved at around 15 min, and then allowed to rest on the warm cookie sheet for an additional 5-10 min.
